It's not unusual these days to see heavily anticipated films fail to live up to the hype, and typically the studio will try and give it some new life upon home release with a director's cut, or in some cases an "ultimate edition".
Those have met varying degrees of success, with the most notable being the aforementioned Batman v Superman; Dawn of Justice. The film failed to deliver a film that was altogether cohesive, and since there was so much on the cutting room floor the studio decided to release an ultimate edition with many scenes put back in.
As for Logan (which currently enjoys a stellar 88.51 rating on ComicBook.com's composite rankings), you shouldn't expect one anytime soon. Actually, according to director James Mangold, it already has one (via ScreenRant). It just happens to be the regular cut of the film. When someone asked Mangold if there is going to be a director's cut, Mangold said "Yes. There is. It is the one in theaters."
Mangold isn't afraid to dip his toe into the extended edition pool either, as his previous film "The Wolverine" did include one, and raised the rating from PG-13 to R. With Logan, however, that isn't a concern, as the whole thing was shot with the R-rating in mind. While it isn't getting a director's cut, it is being considered for a black and white cut.

Logan takes place in the year 2029, where mutant births have become extremely rare. The defenders of mutant kind, the X-Men, are long gone, and the only remains of them are an old and struggling Charles Xavier and a weary Logan. Logan's vaunted healing factor has slowed, and at times doesn't seem to work at all. When a young mutant needs his help, Logan has to unsheathe his claws once more. His job isn't over yet.
Logan stars Hugh Jackman (Logan), Boyd Holbrook (Donald Pierce), Patrick Stewart (Charles Xavier), Dafne Keen (Laura Kinney/X-23), Doris Morgado (Maria), Stephen Merchant (Caliban), Elizabeth Rodriguez (Gabriela), and Richard E. Grant (Dr. Zander Rice). James Mangold is directing and helped on the screenplay along with Scott Frank and Michael Green.
